The essence of Man Xiao Bao's rice noodles is the fat sauce. What exactly is the fat sauce? The fat sauce is a rich, braised bone broth made from whole pork shanks meticulously stewed with authentic spices. Then, pork leg with the perfect fat-to-lean ratio is braised and then deep-fried. After the meaty aroma is released, ghost peppers and sweet vinegar are added and simmered over low heat to create the fat sauce. The broth is so thick that it disappears at the bottom of the bowl, and the sauce is fresh, fragrant, and not greasy.
